Tasty and Safe Thanksgiving Leftovers

Thanksgiving is the right time to celebrate our gratitude with family.  What we don’t want to celebrate is foodborne illness.  How can we make sure to keep our food safe during the holidays?  Jen Haugen, Hy-Vee Registered Dietitian, will show key strategies to keep our families healthy and happy this Thanksgiving.

Leftover Safety

  • Did you know there are only three temperatures to ensure your holiday meat choice is cooked to the appropriate safe temperature? Jen will share USDA recommendations for three types of meat.  
  • Leftovers abound after Thanksgiving, and Jen will share five simple ways to ensure food safety.
  • If you will be all “shopped out” the day after Thanksgiving, Jen will share a favorite recipe using Thanksgiving leftovers.  Kenny will throw in his favorite too.
Cream of Turkey and Wild Rice Soup
Serves 4 (about 1 3/4 cups each)

All you need
1 tbsp Grand Selections extra-virgin olive oil
2 cups sliced mushrooms (about 4 ounces)
3/4 cup chopped celery
3/4 cup chopped carrots
1/4 cup chopped shallots
1/4 cup Hy-Vee all-purpose flour
1/2 tsp salt
1/4 tsp Hy-Vee freshly ground pepper
4 cups reduced-sodium chicken broth
1 cup quick-cooking or instant wild rice
3 cups shredded cooked turkey or chicken (12 ounces)
1/2 cup reduced-fat sour cream
2 tbsp chopped fresh parsley

All you do
1. Heat oil in a large saucepan over medium heat. Add mushrooms, celery, carrots and shallots and cook, stirring, until softened, about 5 minutes. Add flour, salt and pepper and cook, stirring, for 2 minutes more.

2. Add broth and bring to a boil, scraping up any browned bits. Add rice and reduce heat to a simmer. Cover and cook until the rice is tender, 5 to 7 minutes. Stir in turkey (or chicken), sour cream and parsley and cook until heated through, about 2 minutes more.

Nutrition facts per serving: 354 calories; 9g fat (3g sat, 4g mono); 87mg cholesterol; 27g carbohydrate; 0g added sugar; 36g protein; 3g fiber; 478mg sodium; 577mg potassium.
