Creative Foil Packet Ideas for Memorial Day

Memorial Day weekend begins a new season, the camping season and the season of picnics.  How can you create a healthy meal around the campfire while still having it taste great?  Use a foil packet.   Your Hy-Vee Registered Dietitian, Jen Haugen, will provide fun and simple creative foil packet ideas.

Whether you are planning to camp, have a picnic or just grill-out at home, foil packets can be an easy, no-clean-up way to be creative in the kitchen for Memorial Day weekend.  After all, how else can you ensure you don’t have to do the dishes after a meal?  Jen will share how to fold a foil packet.

It’s the perfect time to try out a new recipe. Jen will share some quick and easy ideas to get you cooking around the campfire or grill.
Angel Food Fruity Foil Pack
Serves 2.
All you need:
Non-stick cooking spray
4 strawberries, quartered
1 nectarine, quartered
2 cups angel food cake cubes (equal to 4 slices, cubed)
Pinch of cinnamon
2 teaspoons brown sugar
2 tablespoons chopped walnuts
1 tablespoon non-hydrogenated margarine, cubed
All you do:
1. Tear four 12-inch by 12-inch squares of heavy duty foil.  Use two sheets per foil pack.  Spray the inside of the foil where the food will sit.   
2. Divide and layer fruit over the bottom of each foil pack.  Add one cup of angel food cake cubes to each foil pack.    
3. To each foil pack, add a pinch of cinnamon, 1 teaspoon brown sugar, 1 tablespoon walnuts and ½ tablespoon cubed margarine.  
4. Grill or put in oven at 450 degrees for 10 minutes, or until warmed and margarine melted.
BBQ Chicken and Cheddar Foil Packet 
4 tablespoons barbeque sauce, divided
4 small boneless, skinless chicken breast halves (1 pound)
2 small unpeeled red potatoes, thinly sliced, divided
1 red or green bell pepper, seeded and sliced, divided
1 green onion, finely chopped, divided
Salt & black pepper, to taste
1 1/2 cups shredded reduced-fat Cheddar cheese, divided
  1. Place a foil sheet, approximately 12-by-12-inches, on a work surface. Spray with non-stick cooking spray.  
  2. Spoon about 1-1/2 tbsp. barbecue sauce in the center of the foil sheet. Place one chicken breast half over barbecue sauce, and spread another 1-1/2 tbsp.  sauce over chicken. Top with a quarter of the potato, bell pepper and onion. Season with salt and pepper.
  3. Fold foil in half to cover contents; make narrow folds along edges to seal. Repeat with remaining ingredients to assemble three more packets. Place on grill or over campfire for 30-35 minutes.
  4. Open foil packets with scissors and carefully pull back edges (contents may be very hot). Sprinkle a quarter of the cheese over the top of each chicken breast half and return to grill or campfire, unsealed, for 2 minutes or until cheese is melted.
