This week's Best Bites is all about Latin American flavors.
The name of the resturant is Pasion, and that's also what the chef feels about everything he puts down on a plate.
"Our restaurant is called Pasion Latin Fusion and I'm sure most of you know "pasion" is "passion" in Spanish and the reason we chose that name is because my husband and myself are full of passion," says Monica Martell, who owns the restaurant along with her husband, chef Elvis Bencomo.
"There's Puerto Rican and Mexican influence along with Peruvian and Nicaraguan. All the countries in Latin America basically fused together," says Martell.
Chef Elvis is cooking up dishes using Latin American ingredients and adding a modern twist.
Something new he's trying out: Bocas Latinas. Think a Latin American version of Spanish tapas.
The Bocas Latinas menu includes items like Tuna Causa. That's tuna on top of Peruvian mashed potatoes served sushi style.
The Coca is a flatbread topped with a bechamel sauce plus tomatoes, mushrooms, roasted red peppers and cheese.
You can also try Chef Elvis's unique twist on asparagus, which is served with a fried egg and bits of bacon on top.
One of Chef Elvis's signature dishes has to be the vierias a la Cubana or Cuban scallops. They are perfectly cooked and served on plantains and mojo sauce then topped with avocado and pico de gallo.
