It's National Empanada Day. That's right, there's a day to celebrate the Latin and South American stuffed pastry. Considered to be one of the world's best and most versatile foods. KOB Eyewitness News 4 found an Albuquerque business and that's all they do: Nada but Empanadas.
Sure the empanada is simple to eat. They're not even all that hard to make. But according to Marina Arbetman-Rabinowitz at Nada but Empanadas in Albuquerque, there is one thing you've got to get right.
"Crimping is- repulge- so that's how we call it in Argentina- say again- repulge- and that's sort of how you close it. Sort of that how you say- that's the signature of the filling."
In just a year in business, they've made over 9,000 of the signature doughs of delight, stuffed with practically anything according to business co-founder Linda Hayon.
“There's only one kind. But there are so many varieties even within Latin America. Within Argentina and even within Latin America each province has its own variety, it's own flavor its own style."
There's even a New Mexico version according to Hayon.
"We have a green chile chicken filling that we use. We have 13 different kinds of empanadas. But that's one of our most popular."
Both were shocked to find out that there was going to be an Empanada Day. But not nearly as surprised as Rabinowitz was to get a call from NBC Latino about their Empanada Day story.
"Very exciting. The fact that they were able to find this little piece of Latin America here in New Mexico from New York. We… it was just incredible."
The two are expecting to release an empanada book later this year.
