Lime and avocado come together to make a sweet treat

The 1st place winner at this year's Karo Sweet-Treats for Sweet-Hearts stops by to share her recipe for Lime Avocado Tarts.


Lime Avocado Tarts


3 1/3 cups flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup unsalted butter, softened

1 2/3 cups powdered sugar

1/3 cup Karo Light Corn Syrup

1 large egg

2 teaspoons lime juice

Zest of 1 lime


2 small-medium avocados

1/4 cup Karo Light Corn Syrup

1 cup powdered sugar

Juice and pulp of 1 warm lime

Preheat oven to 400 degrees F. Apply minimal cooking spray into each hole of a mini-cupcake-size pan or into each paper baking cup.

For Tarts: Mix flour, baking powder and salt together. Set aside. Beat together butter, sugar and Karo light corn syrup with an electric mixer until well blended. Then add egg, lime juice and zest until well blended. Combine wet and dry ingredients and blend into a dough. Dough will be very soft, but if too wet to roll out, ok to add small amounts of flour at a time. Roll out dough onto floured surface to 1/4-inch thickness. Cut 2 1/4 to 2 1/2-inch diameter circles. Lay each circle on top of each cupcake opening or across the top of each paper baking cup (dough will droop slightly into each opening). Bake for 8 minutes, remove, then use a large size marble or similar shape to press rounded indentions into each tart to hold the filling nicely. In needed, bake up to 2 minutes more or until edges are slightly golden brown. Cool completely and refrigerate.

For Filling: Whip all ingredients together in a blender and chill.

To Assemble: Add filling to tarts and garnish with thin slice of lime. Serve chilled.

Yields: approximately 48 tarts
