It includes easy family recipes like how to make low carb chicken pizza, a Chicken Chalupa, and stuffed popovers with bacon and cheese! He stopped by Twin Cities Live to share his favorite Back-to-School dinner recipes.
Rob's Chicken Rollups
2 cans chicken or 2 handfuls of forked chicken from rotisserie chicken?
1 package cream cheese?
1 spoonful chives or chopped onion
1/2 spoonful lemon pepper
1 can cream of chicken soup
2 cans Pillsbury crescent dough?
Preheat oven to 350º
Melt 1 inch (2T) of butter in medium pan and turn off heat.
Combine with cream cheese and chives, chicken and lemon pepper and stir.
On large cookie sheet, take each crescent roll square (2 triangles), and lay out, pinching together the seams.?
Place 1 big scoop of chicken mixture in center,
fold up edges and pinch to close. ?
Make sure there are no holes in the dough ball.
Repeat with all the dough.?Beat one egg, and brush over roll-ups.
Sprinkle with bread crumbs.?Bake at 350º for 20-25 minutes.
For sauce, In a small pan on low heat combine 1 can cream of chicken soup and 1/2 can milk.?
Spoon over roll-ups to serve.
Back to School Calzone
1 bag Trader Joe's pizza dough (or make your own)
toppings - cheese, meat, veggies, leftovers.
1 egg, beaten
Preheat oven to 400 degrees
Roll out pizza dough into desired size of circle on large baking sheet lined with parchment paper.
Fill one side with sauce, cheese, leftovers, whatever you’d like in there.
Fold over pizza dough into a half moon shape and press down on seams to seal.
Brush top with beaten egg.
Bake for 15- 20 minutes or until golden brown
Slice and serve.
Eggs for Dinner
2 eggs per person, scrambled
a bratwurst or other meat
Heat up a large frying pan.
Melt a little butter to coat the pan.
Add a small handful of chopped onion a cook until just tender, a couple minutes.
Squeeze the meat out of the bratwurst or add whatever meat you’d like.
Stir and cook.
Add the rest of your veggies and cook for a couple minutes.
Add the cheese and let it start to melt.
Add eggs and immediately lower the heat. (Sometimes I just turn it off altogether)
Stir slowly until eggs start to solidify.
Once eggs are almost completely cooked, add your tomatoes.
Stir to coat.
