Budget-Friendly Weeknight Meals

From taco Tuesday to soup and sandwich Sunday, if you're planning your dinners around the days of the week, then your recipes might need a refresh. Creator of Dining with Alice, Alice Seuffert shared creative and budget-friendly weeknight meal ideas your whole family will love.

General Weeknight Meal Planning Tips

•    Keep a menu for the week. I like to use a dry erase board in my kitchen. I plan out the week’s meals and write it on the board. Then I’m never at a loss for what I’m making. Also, my kids like reading the menu board and knowing what meals I’m making that week.
•    Look through your fridge, freezer, and pantry for meal ideas first before you go shopping.
•    Shopping can be one of the most dreaded tasks. Do your week’s shopping at an off time or day. I like to shop right after work on Friday night or send my spouse because he sticks to the list and we spend less money.
•    Prep at least two meals ahead for the week. It doesn’t have to be the entire meal, it could be making pasta, chopping veggies, or browning meat or cooking chicken.

•    Prep the pasta ahead of time and store in a re-sealable gallon bag in the fridge.
•    Buy larger packs of ground beef when it is on sale and divide it yourself and store in your freezer.
•    When buying spices, save money by buying store brand spices or buying loose or bulk spices and get just what you need.

•    Serve with Grilled Cheese Bites. I like to make a big batch and freeze them in a gallon re-sealable bag. Prepping ahead makes it an easy meal for school lunches or fast dinner on a weeknight.

•    Leave out the half and half at the end and use as a meatless spaghetti sauce.
