Cheese Tarts Using Goat Cheese

Chef Eli Wollenzien, owner of Coalition Restaurant, kicks up some recipes for cheese tarts using goat cheese!


Fig & Olive Goat Cheese Tart

1 each    Tart Crust (recipe below)       
½ Cup    Goat Cheese Spread (recipe below)
1 oz        Dried Figs (diced)
½ oz        Kalamata Olives (sliced)
6 slices    Fresno Pepper (sliced thin)
¼ oz        Olive Oil
1 Tbsp    Hazelnuts (toasted, chopped)
¼ oz         Arugula
½ tsp        Olive Oil
Pinch        Kosher Salt

PROCEDURE:
1.    Spread tart crust with goat cheese spread.
2.    Toss fig, olives, and peppers in olive oil.  Sprinkle evenly over tart.
3.    Bake in oven until goat cheese is set and hot.
4.    Remove from oven and sprinkle with hazelnuts.  Cut into 6 square pieces.
5.    Toss arugula with olive oil and salt.
6.    Place arugula on top of tart.


Strawberry & Basil Goat Cheese Tart

1 each    Tart Crust (recipe below)       
½ Cup    Goat Cheese Spread (recipe below)
2 oz        Strawberries (quartered)
6 leaves    Fresh Basil (chiffonade)
¼ oz        Reduced Balsamic Vinegar
4 leaves    Fresh Mint (chiffonade)

PROCEDURE:
1.    Spread tart crust with goat cheese spread.
2.    Bake in oven until goat cheese is set and hot.  Remove from oven.
3.    Toss strawberries with basil.  Sprinkle mixture evenly over tart.
4.    Drizzle reduced balsamic vinegar over strawberries.
5.    Cut tart into 6 square pieces.
6.    Sprinkle mint evenly over tart.

Tart Crust   

1 Full Sheet        Puff Pastry
As needed        AP Flour
1 each        Egg (lightly beaten)

PROCEDURE:
1.    Preheat oven to 375 degrees.
2.    Unfold dough onto a lightly floured piece of parchment.
3.    Cut into a 10-by-9-inch rectangle (if necessary, roll out slightly first).
4.    Transfer dough on parchment to a baking sheet.
5.    Use the tip of a sharp knife to score a 1-inch border (do not cut all the way through). Prick center all over with the tines of a fork.
6.    Freeze 15 minutes.
7.    Brush border of tart with beaten egg.
8.     Bake until puffed and golden, about 25 minutes.
9.     Remove from oven and press center down to create a hollow center.

Goat Cheese Spread   

1 Cup        Goat Cheese
½ Cup    Cream Cheese
2 Tbsp    Honey
1 each    Egg (lightly beaten)
½  tsp        Kosher Salt
Pinch        Black Pepper

PROCEDURE:
1.    Mix all ingredients together until well mixed.
