Taste of the Northland: Tacchino Cranberry

If your looking for a new pasta salad dish, Valentini's stopped by and showed off one of theirs for Good Morning Northland's Taste of the Northland segment.

Carol Valentini and Collette Warren from Valentini's Vincino Lago in Duluth brought in their recipe for Tacchino Cranberry salad. Valentini said that tacchino is the Italian word for turkey. Valentini also said that this is a very simple salad to make on your own.

Tacchino Cranberry


- 8 ounces turkey breast

- 1 pound rotini pasta

- 2 tablespoons olive oil

- 1 teaspoon salad seasoning

- Salt and pepper to taste

- 3 ounces dried cranberries

- 1/2 cup of green onions, chopped

- 1/2 cup celery, chopped

- 1/2 cup candied almonds

Poppy Seed Dressing:

- 2 cups mayo

- 2 tablespoons dijon mustard

- 1/4 cup powdered sugar

- 2 tablespoons cider vinegar

- 2 tablespoons water

- 1/2 teaspoon black pepper

- 1/2 teaspoon poppy seeds

- 2 teaspoons Kosher salt


Cook pasta al dente. Drain and toss in oil, salad seasoining and cool. Combine pasta, turkey, cranberries, onions and almonds. Stir in dressing and salt and pepper to taste. Top with candied almonds.
