A Duluth chef recently took home a regional honor, earning him a place in a national competition.
Tony Beran, executive chef at Lake Avenue Restaurant and Bar, beat out 14 other chefs at the Minnesota Taste of Elegance on Jan. 15th in Minneapolis. Now, he will travel to the Culinary Institute of America in St. Helena, California.
"It shows that there is some good quality food happening in Duluth," Beran said. "Not just at Lake Ave., but the culinary scene is getting a lot better up in Duluth these days."
Beran also won this regional competition in 2008.
The contest, put on by the Minnesota Pork Board, judges which chef can make the "most innovative, delicious and original pork recipes," according to their website.
Beran's winning dish? Slowly brazen spare ribs, deep-fried coleslaw, bacon and barbeque consommé, and sweet corn jam.
He says that he will be preparing the meal at the restaurant most Friday and Saturday nights until February or March.
