If you'd like to get more fresh vegetables into your diet, there's a new effort to help.
On Tuesday, several groups announced the launch of the Community Supported Agriculture Wellness Initiative. The goal is to get employers to include CSA farm memberships in their health wellness initiatives. Organizers say similar efforts in other areas have led to more participation in CSA farms.
Many farms deliver boxes of fresh vegetables to members weekly. Janaki Fisher-Merritt, who farms near Wrenshall, said, "A lot of folks these days aren't really used to cooking from scratch and using a lot of fruits and vegetables in your diet, and so having it show up in your kitchen is step one." The second step is to know how to use the vegetables, so the deliveries often include recipes.
The CSA Wellness Initiative is a partnership of the Institute for a Sustainable Future, the CSA Guild, and the Lake Superior Sustainabile Farming Association. More information is available at www.lssfa.org/wellness.html.
