Grilling With Ben

Grilling is something folks love to do every summer. Now that the extended winter and spring are over, Good Morning Northland meteorologist Ben Dery has a recipe for a chicken appetizer perfect for the grill.

Ben's Peanut Butter Chicken on a Stick

- 1 lb. chicken tenders -pounded to ¼” thick -cut into 1” strips

- A dozen wooden skewers

Marinade:

- ¼ cup vegetable oil

- 2 Tbs. Peanut Butter 

- 2 Tbs. Brown Sugar (packed)

- 1 Packet Onion Soup Mix

This recipe makes about 12 appetizers. Mix cut chicken and marinade together until well coated. Allow to marinate in refrigerator for 30 minutes. Preheat grill to medium high heat. Threat chicken onto skewers leaving a little space so it cooks evenly. Discard marinade. Grill roughly 6 minutes each side or until fully cooked. You can dip finished product in your favorite dipping sauce or enjoy as is.
