Celebration Salad

1 10 - 12 oz bag baby spinach
1 10 - 12 oz bag chopped romaine
2 red apples chopped small (bite size, but remember, some people have bigger mouths than others!)
1 cup finely shredded swiss
1 cup finely shredded mozzarella
1 cup roasted/salted sunflower seeds
1 cup craisins
(substitute your fave flavors of craisins and/or seeds/nuts!)


Toss well! If your bringing the salad somewhere, put the chopped apples on the bottom and cover with the spinach & romaine to keep them from oxidizing.


Dressing:
3/4 cup canola oil
1/2 cup sugar
1/4 cup apple cider vinegar
1 Tablespoon poppy seeds
1 1/2 teaspoons dried, minced onion
1 teaspoon dry mustard
1/2 teaspoon salt


The easiest way to combine the dressing ingredients is to measure them all into a jar, put the lid on (yes some people have skipped this step, to their dismay) and shake vigorously. This way if you are bringing the salad on the road, the dressing is ready to go!

When ready to serve, pour the dressing (more or less to taste) over the tossed salad & toss again.
