Southern Style Chicken and Dumplings from Cindy Therriault of Viola's Cafe
Bone in , skin on chicken breasts
3 stalks of celery, sliced
3 carrots, sliced
I onion diced
2 cups flour
1 teaspoon salt
1 cup of warm water
Place the chicken, celery, carrots and onions in a large pot and cover with water. Bring to a boil, reduce heat and simmer until chicken is tender. Remove chicken from the stock, let cool and then cut into pieces, removing the skin and bones.
Take 2 cups of flour, add salt and mix. Add the 1 cup of warm water, stir until the mixture is a soft dough. Remove dough from the bowl and knead until smooth. Heavily flour work surface and then roll dough out thinly. With a pizza cutter or sharp cut dumplings into small rectangles. Rub additional flour into the surface of the dough.
Bring the stock back up to a rolling boil and start dropping dumplings a few at a time into the stock. After all the dumplings have been added the stock will thicken into a nice gravy. Then add the chicken and continue to simmer.
When ready to serve, add some fresh chopped parsley. Ladle into bowls and serve..
