Pan Seared Grouper

with Walnut & Savannah Smiles Cookie Crust



6oz Filet of Grouper

1/2 Cup Flour

2 Eggs- Beaten

1/4 Cup Ground Walnuts & 1/4 Cup Crushed Savannah Smiles Cookies Mixed Together

Salt & Pepper

2 Tbs Olive Oil

1/4 Cup White Wine

1/2 Lemon-Juiced

2 dashes Tabasco

2 dashes worcestershire sauce

2 Tbs Salted Butter

2 Tbs Chopped Parsley

Method of Cooking

Sprinkle salt and pepper on your Filet of Grouper. Dredge fish in flour, then into eggs and then in your walnut & cookie mixture. Heat skillet over medium high heat and add olive oil. Cook your fish for 2- 2 1/2 minutes on each side until golden brown. Remove fish from pan and let rest. In the same pan, add your white wine, lemon juice, tabasco and worcestershire sauce. Cook sauce and reduce by half, then swirl in butter and remove from heat. Add fresh parsley and top your cooked fish with your sauce.
